OLYFO Gold Organic is cold-pressed from organically farmed Chemlali olives and certified USDA NOP Organic and EU Organic through Ecocert under the code TN-BIO-001. Free acidity runs at or below 0.5%, and it carries the highest polyphenol figure in our bottled range.

How it tastes

Chemlali is Tunisia’s signature variety and the backbone of the country’s harvest. It gives a softer, rounder oil than Koroneiki — buttery, with almond and ripe apple, and only a light bitterness. Grown organically and pressed the same day, it keeps a clean, fresh character that suits people who find Italian and Spanish oils too aggressive.

What to use it for

Everywhere. Salads, dressings, vegetables, baking, and straight onto bread. It is the oil to reach for when you do not want the oil to dominate.

Harvest and freshness

Tunisian olives are picked in November and December. Ours are pressed the same day they are picked, which is the single biggest factor in how an oil tastes and how long it lasts — olives left in sacks overnight start to ferment, and no amount of care afterwards recovers that.

Oil from each harvest ships from December. Shelf life is 24 months from production, so a bottle bought today is well inside its life. Store it in the dark at room temperature and use it; olive oil does not improve with age.

Certificate of analysis

Every lot is laboratory-tested before it ships and travels with a certificate of analysis covering:

  • Free acidity — the headline quality figure, expressed as oleic acid
  • Peroxide value — how far oxidation has progressed
  • Sensory assessment — a tasting panel confirming the fruity character and the absence of defects

OLYFO’s extra virgin olive oils have taken Gold at the London International Olive Oil Competition, Gold at Olio Nuovo Days in Paris, Gold at ONH in Tunisia and Silver at NYIOOC in New York, all in 2025, and Silver at the Canada IOOC in 2022. Every one of those panels tastes blind — no label, no country, no price.

We are a producer and exporter, not a shop. Minimum order is one pallet per SKU for our own bottled brands. For private label it is three pallets per SKU, and for bulk oil one full 20-foot container. We quote FOB Radès, Tunisia.
