OLYFO Gold is our signature extra virgin olive oil: single-variety Koroneiki, hand-picked on our farms in Kairouan and cold-pressed the same day. Free acidity runs at or below 0.4% — about half the legal limit for extra virgin.

The figures below are the specification we sell against. The figures that matter for your shipment are on the certificate of analysis for your lot, and we send that with every order.

Ingredients First cold press extra virgin olive oil. Extracted directly from superior category olives and solely by mechanical means.

How it tastes

Koroneiki gives a fruity, peppery oil with a green, slightly bitter finish and a peppery catch at the back of the throat. That catch is oleocanthal, and it is a sign of a fresh, polyphenol-rich oil rather than a fault. Koroneiki is also one of the more stable varieties, which is why we use it for the oil that has to travel furthest and keep best.

What to use it for

Finishing rather than frying. Over grilled fish, white beans, tomatoes, a bowl of soup, or good bread. Its character survives being served alongside strong food.

Harvest and freshness

Tunisian olives are picked in November and December. Ours are pressed the same day they are picked, which is the single biggest factor in how an oil tastes and how long it lasts — olives left in sacks overnight start to ferment, and no amount of care afterwards recovers that.

Oil from each harvest ships from December. Shelf life is 24 months from production, so a bottle bought today is well inside its life. Store it in the dark at room temperature and use it; olive oil does not improve with age.

Certificate of analysis

Every lot is laboratory-tested before it ships and travels with a certificate of analysis covering:

  • Free acidity — the headline quality figure, expressed as oleic acid
  • Peroxide value — how far oxidation has progressed
  • Sensory assessment — a tasting panel confirming the fruity character and the absence of defects

OLYFO’s extra virgin olive oils have taken Gold at the London International Olive Oil Competition, Gold at Olio Nuovo Days in Paris, Gold at ONH in Tunisia and Silver at NYIOOC in New York, all in 2025, and Silver at the Canada IOOC in 2022. Every one of those panels tastes blind — no label, no country, no price.

We are a producer and exporter, not a shop. Minimum order is one pallet per SKU for our own bottled brands. For private label it is three pallets per SKU, and for bulk oil one full 20-foot container. We quote FOB Radès, Tunisia.
