He is responsible for overseeing the entire production process, from olive cultivation to oil extraction, ensuring that OLYFO's products meet the highest quality standards. Yahya is an Agro-Industry Engineer and his expertise in production management is pivotal to the company's success.
Salma Lassir Amara
Co-Founder and Strategy DirectorSalma Lassir Amara is a seasoned strategist with over 20 years in global transformation. At OLYFO, she shapes growth by aligning strategy with business goals, ensuring swift, impactful results. Passionate about excellence and diversity, Salma brings extensive experience leading multicultural teams worldwide.
Our organic range is certified USDA NOP Organic and EU Organic through Ecocert (TN-BIO-001), and OLYFO is registered with the US FDA under Registration No. 18131951200 — export-ready for the United States and the European Union.
Our oils are pressed in Kairouan and Jammel, then bottled and stored at partner facilities in Jammel (Monastir) and Mornag (Tunis), operating under ISO 22000 and HACCP food-safety management, with Halal and Non-GMO certification, and Kosher certification in progress.
Every batch is laboratory-tested before shipping and travels with a certificate of analysis covering free acidity, peroxide value and sensory profile — so what is on the label is what is in the bottle.
OLYFO’s extra virgin olive oils have been recognised seven times across five international competitions: Gold at the London International Olive Oil Competition 2025, Gold at Olio Nuovo Days Paris 2025, Gold at ONH Tunisia 2025, Silver at NYIOOC New York 2025, Silver at the Canada International Olive Oil Competition 2022, and Bronze at both the London IOOC and the Canada IOOC in 2021 — where OLYFO Origins was first recognised. Every medal is judged blind by international panels, so the award goes to the oil, not the label.
