Grilled Zucchini & Halloumi with OLYFO – 2500 Years of Tradition Gold & Fresh Mint

A light, fresh summer starter inspired by 2,500 years of Mediterranean tradition. Perfect for spring entertaining.

Ingredients (Serves 4)

  • 2 medium zucchini, sliced lengthwise into ½ cm thick strips
  • 200 g halloumi cheese, sliced into 1 cm thick pieces
  • 2 tablespoons of OLYFO 2500 Years of Tradition
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (optional, for a hint of sweetness)
  • A handful of fresh mint leaves, roughly chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: a sprinkle of chili flakes for a subtle kick

Preparation

1-Preheat the Grill:
Preheat a grill pan or outdoor grill to medium-high heat.

2-Prepare the Zucchini:

Brush zucchini slices lightly with olive oil on both sides.

Season with salt and pepper.

3-Grill the Zucchini:

Place zucchini slices on the grill for 2–3 minutes per side until tender and lightly charred.

Remove from the grill and set aside.

4-Grill the Halloumi:

Lightly brush halloumi slices with OLYFO – 2500 Years of Tradition.

Grill for 1–2 minutes per side until golden brown and slightly crispy.

5-Assemble the Plate:

Arrange grilled zucchini on a serving platter.

Layer grilled halloumi on top.

Drizzle with OLYFO – 2500 Years of Tradition and lemon juice.

Sprinkle with fresh mint leaves and, if desired, a few chili flakes.

Optionally, drizzle a small amount of honey for balance.

6-Serve Immediately:
Enjoy as a starter with crusty bread or as part of a mezze platter.
