Ingredients:

  • Carrots, zucchini, bell peppers 
  • 4 tbsp OLYFO 2500 Years of Tradition – The Origins Extra Virgin Olive Oil 
  • Thyme or rosemary 
  • Salt & pepper 

Preparation:

  1. Preheat oven to 200°C. 
  2. Cut vegetables into pieces. 
  3. Toss with OLYFO 2500 Years of Tradition – The Origins EVOO, herbs, salt, and pepper. 
  4. Roast for 25–30 minutes until golden and tender.
