The beginning of autumn is always a special time for olive oil lovers.
It is at this season that the first olives of the year are harvested, and it marks the beginning of a laborious process of transformation of the olives into oil.
So these months are perfect to enjoy many delicious dishes such as warm vegetable soups, using the olive oil, since it enriches the flavors, strengthens the immune system and keeps the flu and colds away !
Here is a simple yet great Tunisian soup with barley semolina that is called (chorba fric/ tchich) !
Ingredients :
- Beef & Barley semolina
- Minced onion
- Grated and soup concentrate of tomato
- Fresh Parsley bouquet & Celery stalk
- Chickpeas
- Caraway seeds, curcumin, salt & pepper
- Cloves of garlic
- Olyfo Olive oil
And also in Tunisia, we love to keep it spicy … so we add harissa to basically every dish! But you can remove it if you don’t like it !
Instructions :
- In a pot, heat the Olyfo’s olive oil and add the meat, and then add the chopped onions and fry for 3 minutes.
- Add the chopped tomato and the chopped parsley and dissolve the tomato concentrate in water and add it to the pot along with the harissa.
- Add all the spices and after 3 minutes add 2 liters of water to cover the pot and let it cook.
- Rinse the barley semolina and add it with the chickpeas.
- Mix well and let cook for about 20 minutes while stirring regularly.
Sprinkle it with parsley and that’s it !
