Tender, delicious and quick, baked oven fish with Tunisian extra virgin olive oil is one of the best and healthiest dishes for dinner out there.
A simple yet light weeknight meal for the whole family !
Ingredients :
- Fish
- Olyfo Extra-virgin olive oil, plus extra for serving
- Cherry tomatoes and tomato juice
- Lemons and lime juice
- Black olives & capers
- Salt & pepper
Ps: Fish and seafood dishes are great for trying out different flavors ! You can make your own spice blends and experiment with different spices and herbs (oregano, thyme.. )

Instructions :
- Preheat the oven to 180°C.
- Drizzle half the oil into a baking dish.
- Pour in the cherry tomatoes and their juices, olives, capers and thyme sprigs.
- Season with a little salt and stir to combine.
- Drizzle with the remaining oil and season with a salt and pepper and then bake for another 15-18 minutes or until the fish is just cooked through.
- Take the meal out of the oven, scatter with extra thyme leaves, season with a little extra pepper and drizzle with a little Tunisian extra-virgin olive oil
Serve it with rice or any bright salad you love !
