  1. Activate the Yeast: Mix lukewarm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Mix the Dough: In a large bowl, combine flour, semolina, and salt. Add egg, olive oil, and yeast mixture. Mix until shaggy.
  3. First Rest: Cover and rest for 30 minutes.
  4. Knead: Drizzle 1 tbsp olive oil over dough. Knead for 8–10 minutes.
  5. Shape: Form into your desired shape. Place on parchment-lined tray.
  6. Second Rise: Cover and rise again for 15 minutes.
  7. Preheat Oven: Set to 180°C.
  8. Egg Wash & Toppings: Brush with beaten egg. Sprinkle seeds.
  9. Bake: 25–30 minutes until golden and hollow-sounding when tapped.
