Ingredients :
250 grams of rice
400 grams of a seafood mix or turkey breast or meat
1 large onion
200 grams of washed and chopped parsley
4 carrots
200 grams of peas
150 grams of chickpeas
1 tsp of tomato paste
1 tsp of harissa (you can use two if you prefer spicier dishes)
1 tsp of red chili powder (paprika)
1 tsp of coriander powder (tabel)
1 tsp of dried mint powder
2 tsp of Olyfo’s extra virgin olive oil
Salt and pepper to taste
Instructions :
In a large bowl, put all the ingredients together and mix them thoroughly until you have a homogeneous mixture.
Transfer them to the top part of the couscous steamer while filling the bottom part with water. Leave them to cook over medium heat for an hour, stirring every 15 minutes.
Garnish the dish with Tunisian olives, some parsley, and enjoy !
