With its low fat and calorie, and high protein content, octopus is quite rightly considered a good catch !
It’s an excellent light and fresh appetizer, especially on a warm summer day, and it can be found as a salad’s principal ingredient on almost every seafood menu in Tunisia !
The octopus salad is prepared a little differently around the world, and everyone has their own special recipe.
Here is the Olyfo way :
- Cleaned octopus
- Olyfo’s 2500 years of tradition - Olive oil
- Tomatoes
- Walnuts
- Cashew nuts
- Pumpkin seeds
- Corn
- Cheese
- Lime juice & vinegar
- Salt & Pepper
-Boil a large pot of water and add salt and pepper and plunge the whole octopus into the boiling water.
-Count to 10 and remove it.
-Bring to the boil again and repeat this process twice.
- And then let it cook on low heat for about 1 hour.
If the tip of a knife can easily penetrate the octopus then you can remove it from the pot and let it cool.
- Cut the tomatoes and the cheese and the octopus into pieces
- In a bowl, mix the quartered tomatoes with the cheese, walnuts, cashew nuts, pumpkin seeds, the lemon juice, the vinegar and a dash of Tunisian extra virgin olive oil.
Season with salt and pepper, add the pieces of octopus and serve immediately.
