Halloween is over, but the pumpkin soup is just getting started!
Ever wonder what to do with all of those pumpkins left over from Halloween nights? We are here to tell you: make pumpkin soup!
It may seem like a lot of work to create a whole new soup, but it’s really not,
here is what you need :
Ingredients :
- Pumpkin
- Extra virgin olive oil
- Shallots and carrots
- Ginger
- chilli powder or the Tunisian Harissa
a few sprigs of fresh herbs , such as chives, mint..
Instructions :
Roughly chop the pumpkin, peel and chop the shallots and carrots, then peel and finely grate the ginger. Pick and finely chop the herbs.
Place the pumpkin, shallots, ginger and some olive oil in a large saucepan and sauté until soft, and then you can add water and season it with salt and pepper then bring to the boil and simmer for 40 minutes.
Blitz in a food processor then serve with the fresh herbs and lime juice.
PS: Pumpkin leftovers can be used in other varieties of ways as well.

* Make bread
* Make muffins or cookies
* Put them on top of a cupcake or cake (if you're feeling extra festive)
