- 5-6 medium carrots, peeled and cut into 1-2 cm thick rounds
- 2 garlic cloves, peeled
- 1-2 tablespoons traditional harissa paste Poppa Peppa
- 1 teaspoon caraway seeds, crushed in a mortar
- 3 tablespoons extra virgin olive oil (preferably OLYFO)
- 1-2 tablespoons white wine vinegar or fresh lemon juice
- Salt, to taste
- Fresh parsley, finely chopped (for garnish)
- Optional toppings: hard-boiled eggs, tuna, olives, or cheese
Preparation:
To prepare Omek Houriya, begin by boiling carrot rounds and whole garlic cloves in unsalted water for 20–30 minutes, until they become soft enough to mash effortlessly.
Drain them well, then mash while still warm using a fork.
Season the mixture with harissa, crushed caraway, olive oil, vinegar or lemon juice, and salt, blending until the flavors are fully combined.
Transfer the dip to a serving dish, garnish with fresh parsley and your favorite toppings such as hard-boiled eggs, tuna, or olives.
Serve chilled with warm pita or crusty bread for a perfect mezze moment.
