Tunisian Fricassé

Tunisian fricassé is a popular street food made from soft fried bread filled with flavorful ingredients like tuna, potatoes, eggs, olives, and spicy harissa. It is crispy on the outside, soft inside, and full of bold Mediterranean flavors.

Ingredients

For the dough:

  • 500 g all-purpose flour
  • 1 tablespoon yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3-4 tbs Extra Virgin Olive Oil 2500 Years of Traditions
  • Warm water (as needed)
  • Extra Virgin Olive Oil 2500 Years of Traditions for frying

For the filling:

  • 2 potatoes, boiled and mashed
  • 3 hard-boiled eggs
  • 1 can tuna, drained
  • Green or black olives
  • Harissa (to taste)
  • Capers (optional)
  • 2500 Years of Traditions Extra Virgin Olive oil

Preparation

In a large bowl, mix the flour, yeast, sugar, and salt. Add 2500 Years of Traditions Extra Virgin Olive Oil and gradually pour in warm water while kneading until you obtain a soft, smooth dough. Cover and let the dough rise until it doubles in size. Once risen, divide the dough into small balls and flatten them slightly. Fry the dough pieces in hot extra virgin olive oil until golden on both sides, then place them on paper towels to remove excess oil.

For the filling, mash the boiled potatoes with a little olive oil, salt, and black pepper. Slice the boiled eggs and prepare the tuna and olives. Open each fried bread gently from the side to create a pocket, spread harissa inside, then fill with mashed potato, tuna, egg slices, olives, and capers if desired. Serve warm or at room temperature.
